EGGS

The incredible, edible egg. A report this week called them wonder food for our aging bodies. Though snow is still aground in the shadows and the goldfish pond is covered in ice, I gather more eggs than I know what to do with. If I bake, I want to eat it all. I did sell a few dozen, but they are not organic. The feed the chickens eat has to be organic and that would cost a fortune. The yolks are a deep orange though and I like to think they are healthier than the pale lemony yellow ones from the store. Always buy cage free or free range. The others are cruelly raised.

  2. Very sweet post...I buy the cage free eggs from the grocery but,I would prefer home grown...I guess is the way to put it....smile...blessings

    I buy brown eggs, but not sure if they compare to free range ?
    I'll have to scout the farms..

  4. Hi Donna, I've not been around in a while. I am busy as can be! I always buy free range-great advice there. Yes, the fat, sturdy orange yolks are sooo much better than the runny, pale flat ones in the supermarket. Do you have aruncana's? That's what it looks like in the picture. The shells are as nice as the insides:)

  7. I love love love eggs - and go through them by the dozens...becuase I have high cholestorol..so I can only eat egg whites!

  8. Yes, Jackie, I do keep Aurancana chickens. The eggs can be pink, green, blue and gold. They are also very sociable/sweet. Julie, you are a better woman than me. I would rather not eat just the whites. Maybe so if they had lots of veggies and cheese in them. Lowfat, of course.
