Tomato What?




I have had an abundance of tomatoes this summer.  So many in fact, I didn't know what to do with all of them.  Well, I decided to oven dry some of them which I've never done before.  The last photo is probably equivalent to one whole tomato.  What? I burned the first batch and nearly this next.  A bushel ends up being a handful. Supposedly, I can freeze these, then re-hydrate them in a jar of olive oil and herbs with garlic.  Not sure what to do with them then.  
Do any of you know how to use them?

That is a gorgeous photo of the different colored tomatoes. I am envious of your harvest - squirrels take all of mine!

I don't know much about dried tomatoes, but they can be put in olive oil to flavor it, or used in pasta sauces....let us know what you find out!

It's amazing how small they get isn't it?
Yes sun dried tomatoes are available just in a package or in oil.
They are wonderful rehydrated in hot water..then added to saladsetc..breads..same w/ the olive oil ones..They add so much flavor to so many dishes..:)

Dear Donna - maybe you can use them in soup. I know my Mom and Dad dried some a few years ago and stored them away on the shelf (not sure what they planned to do with them) but at the time it must have sounded like a good idea. (LOL)! Keep me updated on how you put these to good use. Hugs

I loved sun dried tomatoes on bagels when I was a teenager .
Actually I bet they could make a lot of things tasty if you got creative with them.

No help from me I'm afraid. I used to dehydrate fruit and it was really depressing watching it shrink like that! At least they are compact and can be stored with little effort. I'm thinking Debbie has the best idea with using them in stews and soups. We grew 4 kinds of Heirloom Tomatoes and I am at a loss as to how I will use them all. How many fried green tomatoes can 2 people eat? How many BLT"S? Well, they are pretty sitting in the window, AND the goats love them.

I like to roast them slowly whole with just the tops cut off and a little olive oil drizzled over them. So yummy! Eat them as a side dish.
