Clover Ice Cream


Over the holiday weekend, my grandaughter, Isobel, and I picked white clover and made home-made ice cream with it.  It was delicious and tasted of summer.  


We added about a cup of the chopped clover to milk and cream and let it sit for several hours, then strained it.  It did have tiny flecks of clover in it, but I didn't care.

























I did not want it flavored too strongly, so instead of vanilla, I flavored it with apple juice and a ribbon of honey. Since I rarely measure anything, if you want the recipe, I will put it to paper.  Isobel and I thought it was superb (my husband said it tasted like grass), but it was sweet summer at its finest.

PS - I researched white clover to make sure it wasn't toxic and found out that it is full of protein.  Who knew?

Donna - this sounds fabulous. I make homemade ice cream and now I will have to add some of summer's finest to mine. Interesting about the clover being rich in protein. (LOL) - Now if I add this to my ice cream I will not feel so guilty eating it because it is something good for me. Have a great day.

Oh! And i didn't know Borgias was ending! I've been getting
it on Netflix. :( Such a bummer. It was fun to go in and see the
place he was renovated in real life. Anyway, we'll weep for the
end of the show together! I've haven't started season 3 but I'm thinking
of getting Showtime for a month to watch all the episodes with On Demand.

I am constantly amazed at what some creative people do with bits of nature and food. I had Lavender ice cream last weekend, at the Lavender Festival, appropriately.
